Some people are only too glad to get rid of them, but a Trinity Bay man is offering cash for bags of dandelion brought to his business.
Jerry Byrne owns and operates the Doctor’s House Inn and Spa in Green’s Harbour. His chefs have developed a number of dishes derived from the lowly dandelion, which utilize the entire plant, root and all.
He says they roast the roots and make coffee, not to mention the leaves which are used in salads.
Newfoundlanders have traditionally used the greens from dandelion for cooked dinner and some even drink the liquor from boiled greens, but Byrne says few have ever heard of a delicious honey that can also be made from the flower heads.
Byrne is offering five dollars for a bag of dandelions and wants plants that have never been exposed to herbicides or fertilizer.
